Afang soup preparation

The Nigerian African soup, is a native soup of the efiks poeple of Akwaibom and Crossriver states of Nigeria but enjoyed by almost all Nigerians. It is a very nutritious soup which consists of mainly vegetables. Afang is prepared with little quantity of water leaf and Afang leaf.
  The Nigerian Afang soup should not be confused with okazi soup known to the Igbo people speaking eastern part of Nigeria. the major difference is that a soup thickener is added to okazi soup to increase its thickness, but Afang soup gets it's thickness form the bulk of vegetables used in preparing it.

Ingredients for preparing Afang soup
1.500g of Afang leaves
2. 250g of beef
3. 15g of smoked fish
4. 500ml of palm oil
5. 1½kg water leaves(alternative: lamb lettuce or spinach if you live outside Africa)
6. Stockfish (optional)
7. 2 tablespoonful of grounded Crayfish
8. 1½ handful shelled periwinkle (optional)
9. Seasoning cubes
10. Onions (chopped)
11. Yellow pepper
12. Salt to taste



Tips before preperatation
- wash and slice the water leaves and keep it aside. Then the Afang it is either they wash it and slice it in the market or you do it by your self. After that pound or blend it.
( The dry leaves are tougher than the fresh leaves so try to grind it smooth
- Grind your crayfish and yellow pepper
(You can use the blended yellow pepper)

How  to prepare
- Wash or risen the pot and make sure it is clean, then wash the meat and pour it in the pot add salt to taste, seasoning and onions add a little quantity of water.

- Cook the meat for about 5-10 mins, after that add stock fish, smoked fish, crayfish and lastly periwinkle. Pour palm oil then add water leaf (sliced, pound or blended). Cover the pot to cook for about 2-3 mins

- open It stir and taste if the salt and seasoning Is okay, if no add more to your tast. If yes you can add the Afang leaves and stir it very wel, taste it and leave to cook for about 1-2 mins so not to allow it to over cook. And your Afang soup is ready. Enjoy!

Afang soup is served with Eba, pounded yam, fufu, semolina, Amala, wheat meal, Tuwo masara or any Nigerian Bolus meal.
