Okro vegetable soup to me is one of a kind. It is among the delicious soup prepared from the eastern part of Nigeria. The soup can be made with more vegetables. Okra/okro soup is one of the quickest and easiest Nigerian soups to prepare. Some argue that a lot of work goes to the cutting of the two vegetables used in preparing this recipe. But once the vegetables are ready to be used it cooks in no time. The traditional vegetable okro soup is made with fresh ugwu leaves.

Ingredients for preparing vegetable okro soup
- 1000g assorted meat
- fresh pepper
- 350g of okro (chopped or grated)
- 1½ cup of palm oil
- Stock fish
- 3 seasoning cubes
- 4½ table spoons of cray fish
- 1 large onion (chopped)
- salt to taste
- smoked fish
- 250g of pumpkin leave (chopped) alternative: spinach (fresh or frozen)
Tips before presentation
- Cut or grate your okra into tiny piece. The tinier you cut the okra, the more it will draw. If it is the cutting method you want to use, you need to make a few vertical cuts on the okra fingers.
- Grind the crayfish, you want you can achive that in the local market
- Wash the pumpkin leaves, and cut into tiny pieces. If it is frozen spinac, defrost and cut into tiny pieces
- Wash the assorted meat properly and cut into bite-able sizes and set aside
How to prepare
- Put the meat and stock fish into the pot add salt, cray fish and ½ of the chopped onion, add two seasoning cubes and salt to taste then leave to cook for about 3-5 mins
- If you are satisfied with the softness of the stock fish you can then add smoked fish , crayfish and peppe, pour in palm oil and stir very well, leave to cook for 2-3 mins
- After that open and check if everything you used above is okay. If yes pour in your okro, after that put in the remaining ½ chopped onion then leave for less than a minute
- add your vegetables and stir properly and leave for 2 mins. ( this is to make the soup look fresh) And your vegetable okro soup is ready. Enjoy!!
Vegetable okro soup is served with Eba, Amala, Semolina, Fufu or pounded yam.
